Warm Up with Immune-Supporting Roasted Pumpkin Soup

Ingredients:
- 1 medium baking pumpkin or squash halved and seeded
- 1 tbsp olive oil or avocado oil
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric (plus a pinch of black pepper to enhance absorption)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 3 to 4 cups low-sodium vegetable or bone broth
- 1/2 cup full-fat coconut milk (or cream of choice for extra richness)
- Salt and black pepper to taste
- Optional garnish: Pumpkin seeds (pepitas), fresh thyme, or a drizzle of coconut milk
Instructions:
- Roast the Pumpkin: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Brush the cut sides of the halved pumpkin with a little olive oil and place them face-down on the sheet. Roast for 35–45 minutes, or until the flesh is soft and easily pierced with a fork. Allow to cool slightly, then scoop out the flesh.
- Sauté the Aromatics & Spices: In a large soup pot, heat 1 tablespoon of oil over medium heat. Add the chopped onion and sauté for 4–5 minutes until translucent. Stir in the minced garlic, grated ginger, turmeric, cinnamon, and nutmeg. Cook for 1–2 minutes until fragrant.
- Simmer: Add the roasted pumpkin flesh and 3 cups of broth to the pot. Stir well and bring to a gentle simmer. Let it cook for 10 minutes to allow the flavors to meld together.
- Blend: Using an immersion blender (or transferring in batches to a high-speed blender), puree the soup until completely smooth. If the soup is too thick, add the remaining cup of broth until you reach your desired consistency.
- Finish: Stir in the coconut milk and season with salt and black pepper to taste. Simmer for another 2–3 minutes until heated through.
- Garnish & Serve: Ladle into bowls and top with toasted pumpkin seeds, a pinch of fresh ground pepper, or a fresh sprig of thyme. Serve warm and enjoy!
