Indulge with Silky Bean Fudge
Nutrition, RecipesFor a delicious sweet treat that adds a tasty twist on added fibre, this silky bean fudge recipe is a winner.
It is a tried and true recipe in my house, I love the flavour and texture and it comes together so quickly and easily! I’ve even been known to have this for breakfast.
Ingredients:
- 3 ½ cups cooked beans (any beans work)
- ¾ cup melted coconut oil
- ¾ cup cocoa powder
- ½ cup sweetener or more or less to taste (usually I use honey or maple syrup)
- ½ tsp vanilla
- 1/8 tsp salt
Directions
1. Put all the ingredients in a high-powered blender (like a Vitamix) or food processor and process until smooth. Adjust sweetener to taste at this point.
2. Spread into an 8x8 pan greased or lined with parchment paper
3. Place in the fridge for at least 1 hour until firm and then cut into squares. I have also rolled then into balls and coated with nuts or seeds or additional cocoa powder to make a truffle like treat
4. Store in the fridge or freezer
